The nights are steadily getting warmer, the sun is staying out later, and we’re ditching our heavier jackets to enjoy the nighttime bliss. Especially should that include stargazing. We’re totally sold on the idea of pouring summery cocktails, laying on a blanket, and staring up at a sparkly sky with good company. Since New York City is the city that never sleeps, we don’t really get to enjoy peaceful nights under the stars (what stars?!). And while that idyllic getaway sounds amazing, we can’t imagining giving up star-gazing the NYC way: beneath the colored lights of the Empire State Building and white lights at the top of the Chrysler Building.
Watermelon Agua Fresca
serves a few lingerie clad stargazers
1/2 Watermelon, seeded and cubed (about 2 cups)
1 cup Water
3 Limes, Juiced
2 Tablespoons Sugar
Add watermelon to a blender and blend until completely pureed. Using a fine mesh sieve, pour puree through into a large bowl or measuring cup, using a spoon to press the last of the liquid out when you get to the end. Combine watermelon juice, water, lime juice, and sugar in a large pitcher. Taste and add more sugar if needed. You can also stir in some fresh mint leaves (or just garnish the drinks with them) for taste. Chill until cold.
